Siles (Jaén) is a pueblo located at the extreme northeast corner of the province, at the
edge of the Sierra de Segura. Its economy is predominantly based on olive growing and
sheep farming.
This pueblo celebrates its two patron saints, Nuestra Señora de la Asunción and San Roque
for 4 days, steeped in traditions since earlier times.
One main tradition is meat cooked following the oldest recipe, in the "caldera del santo"
(the saint's kettle), a copper cauldron built in 1853. The cauldron is at the center of
the festival where everyone passes to see it cooking. After the ceremonial morning
procession where the image of San Roque is carried from the parochial church to the
plaza, the meat is blessed and shared by everyone. Tucked away in the upper regions
of Andalucia, this is a pueblo whose people continue to commemorate their past history.
